Try it. You'll like it.


I'm not really a fan of tomatoes, but I had this bruschetta at a party last week and I was very impressed. So, I tried it out last night on my family and they liked it too!

Bruschetta

1 pkg grape or cherub tomatoes, quartered
2-3 TBS red onion, diced
4 cloves garlic, pressed or diced
3 TBS aged balsamic vinegar
2 TBS extra virgin olive oil
1 tsp fresh lemon juice
salt/pepper to taste, preferably fresh ground
¼ cup coarse chopped fresh basil, or more/less to taste*
2 TBS grated parmesan cheese, optional

1 garlic clove, use later
1 French baguette, sliced

-Mix the first six ingredients. (If you are making ahead of time, save the basil until right before serving because it browns quickly)
-Allow to marinate 10-15 minutes.

-Toast the baguette slices. While hot, rub with the last garlic clove.

-You may add fresh mozzarella cheese

-Serve toasted bread with bruschetta mixture.

-Enjoy~

Next time I might try adding all ingredients to the food processor to cut down on the prep time, although the nice big pieces are very pretty.

I miss tomatoes so much...

it's good to know there is a good bruschetta recipe out there though!

I love bruschetta! It's also really good if you put a bit of mozzarella on top and stick the whole thing under the broiler for just a minute to melt the cheese. It makes the tomatoes taste extra sweet and delicious!
